ABOUT CHIMI

Chimichurri sauce is, as we know it today, the traditional steak sauce of Argentina, concocted and consumed by the Gauchos of the Pampas region.

Chimichurri origins are unknown. Among the many folk stories, they say that the name comes from a Basque word "tximitxurri" which loosely translates to "a mixture of several things in no particular order."

Some of the other stories claim that one some English man named James Curry invented it and the name of the sauce took his name after some butchering by the locals.

Other people claim that the locals of the viceroyalty of la Plata (Former colony of Spain) were introduce to Indian curry and when they couldn't fully pronounce "Give me Curry" it morphed into "Gimme Curry" to eventually land on "Chimichurri". Interestingly enough, chimichurri and curry are very different. 

In conclusion, nobody really knows where it comes from. There are theories and claims, but no one has been able to truly establish its origin. 

People often ask us: "how do you say chimichurri?" Super simple! Think Jimmy with a CH- in the beginning, and Churro but with a "ee" sound in the end.

Our CLASSIC Chimichurri is made with fresh chopped parsley,Canola oil, vinegar, oregano, garlic, chili flakes, Guinea spice, Paprika peppers, and salt.

Our AVOCADO Chimichurri has the same ingredients except for Canola Oil that is replaced with Avocado Oil.

Pablo Kim's Chimichurri does not contain gluten.

We want you to enjoy Chimichurri sauce in all its glory. We make it in small batches so that the goodness in your jar is no older than 72 hours. We really make an effort to serve you chimichurri sauce as fresh as possible so that you can enjoy it as much as we do.

Shelf life: Chimichurri evolves in its flavor as it ages. The fresh stage lasts about 2 to 3 weeks when refrigerated, and about 7 days if not. Chimichurri sauce is usually served aged. The ingredients cause a natural pickling process. We recommend that it is consumed within 6 months and be kept in cool dry place. 

We have seen people pair chimichurri in delicious ways with various foods, often times in ways we didn't imagine.

We have seen people enjoy chimichurri on :

Bread, Rice, Soups, Pastas, Spaghetti, Red Meats, Poultry, Seafood, Roasted or Grilled Vegetables, Mixed in Salad as Dressings, Topping on Hummus, Eggs, Mixed in Potato Salad, On Sandwiches, as a Pizza Topping, and even Chips!
